2 Tbsp Oil
1-2 Tbsp The Greedy Fox Cajun seasoning
1 White onion roughly chopped
1 Clove garlic, crushed
1 Courgette sliced into 1cm rounds
1 Roughly chopped red pepper
1 Roughly chopped green pepper
200 Gram long grain rice
700ml Good quality veg stock
2 Corn on the cobs sliced into rounds
1/2 Lemon juice only
Handful chopped flat leaf parsley
Salt and pepper to taste
Saute peppers,onion,courgette,garlic and The Greedy Fox Cajun seasoning over a med/high heat in the 2 tbsp oil for 4-5 minutes.
Stir in the rice and cook for another 2mins.
Pour in the stock and reduce to a simmer cover and cook for 10 mins.
Lie the corn on top of the rice cover and cook again for another 10-12 mins or until the rice has absorbed all of the stock and the corn is soft.
Add the lemon juice and season to taste.
Scatter parsley all over and serve at once
