A perfect warming meal with little fuss but packed full of flavour.
750g Chicken thighs
2tbsp Gluten free plain flour/ normal is fine
1 red onion sliced
1 sliced red pepper
1 tin black beans drained
1 Sweet potato chopped into chunks.
1 heaped tbsp The Greedy Fox Caribbean seasoning.
500ml Chicken stock.
2ooml coconut milk
Salt and pepper to taste.
100g gluten free flour/normal flour is fine.
1-2tsp The Greedy Fox Caribbean Seasoning
Put the chicken thighs, flour and The Greedy Fox Caribbean Seasoning in bowl and mix to coat. When all coated add to the slow cooker with the onion, pepper and sweet potato.
Add the stock back beans and sweet corn cook on high for 2 1/2 hrs.
Meanwhile make the dumplings.
Mix the flour,suet and The Greedy Fox Caribbean seasoning together until well mixed.
Slowly add little coconut milk at a time until you get a soft dough.
Pinch small pieces of dough of and roll into walnut sized balls.
Add the coconut milk and dumplings season to taste.
Cook for another 30-1h or until the sweet potato is soft and the dumplings are soft and fluffy
Serve with rice and peas, equally as good in a bowl on its own.
