A real hearty soup perfect for every occasion.
500g Mixed veg we used leftovers in the fridge (A few slices courgette, 1/2 red pepper, sliced, 1/2 yellow pepper, A handful cherry tomatoes, A few slices aubergine, 1 small red onion, quartered)
1-2tbsp The Greedy Fox Mediterranean seasoning
400g Tin chopped tomato
200ml chicken/veg stock
1-2tbsp Rape seed oil or your low fat alternative
1/2 Avocado diced
Salt and pepper to taste
Pre heat oven 200deg.
Place all veg in a baking tray drizzle with the oil and season with The Greedy Fox Mediterranean seasoning toss well to coat. roast in the oven for 30-45 mins or until soft and slightly charred around the edges. Remove from the oven.
Place veg in a heavy bottomed saucepan and add the chopped tomatoes and stock, simmer for 10 mins.
Blend until smooth.
Season to taste
Top with fresh chopped Avocado and serve piping hot with Crusty Bread.
