2 Medium white/red onions
100g Plus 1Tbsp gluten free self raising flour
125g Soda water/Beer
1/2tsp baking powder
1 heaped Tbsp The Greedy Fox Seasoning of your choice. We love these with Caribbean.
oil for frying.
Cut the onions into thick rings.
Place the cut onions into a bowl with the 1Tbsp of flour and toss to coat.
Put the remaining flour into a separate bowl with The Greedy Fox Caribbean seasoning and baking powder. Make a well in the centre and slowly add the soda water/beer whisking to form a batter that coats the back of a spoon. [You may to add a little more soda water/beer]
Heat the oil to 180 deg or until a cube of bread dropped in floats and is golden.
Dip the onion rings into the batter then drop them carefully into the oil fry until golden.
Drain on kitchen paper.
Serve while hot.
