Serves 2, easily doubled.
4 boneless chicken thighs. Ask you butcher to do this.
1-2 Tbsp The Greedy Fox Moroccan Seasoning.
20g Feta cheese (or mozzarella), finely chopped.
20g Dried Apricots, Finely Chopped
1 Tbsp Chopped Coriander
Pre heat oven 200 degree
Mix together in a bowl, the Feta Cheese, Apricots and Coriander. Divide the mix into 4.
Lie the Chicken Thighs out flat and layer the mix down the middle of each thigh. Fold the thigh in half and secure with a cocktail stick.
Place on a baking tray and cook in the pre heated oven for 25-30 mins or until cooked through.
