A real winter warmer perfect for those cold evenings but luxurious enough for entertaining.
300g Cauliflower cut into small florets
100g Peeled cubed white potato
1/2 White Onion roughly chopped
1-2 tsp The Greedy Fox Moroccan Seasoning
400ml chicken/veg stock
A handful flaked almonds
1 teaspoon rapeseed oil or your low fat alternative
In a medium saucepan saute the onion in the oil over medium heat for 5 mins until translucent add The Greedy Fox Moroccan seasoning and mix well.
Add the potato and cauliflower continue to saute for 3-5mins mix in the stock and simmer until the potato and cauliflower are soft then blend until smooth.
season to taste and top with flaked almonds and serve with flatbreads.
