Party Time, wow your vegan guests with these mini tacos.
Tortillas. 1 Large tortilla should make around 6 mini tacos.
1/2 cauliflower cut into bitesize florets
1-2Tbsp The Greedy Fox BBQ seasoning
50g Dairy Free Butter, Melted.
1/4 Green cabbage thinly sliced
3 Carrots thinly sliced
1/2 White Onion thinly Sliced
1Tbsp Olive oil
Preheat oven 180deg
Using a 3inch cookie cutter cut the tortilla into smaller tortillas you should get 6/7 from each big tortilla.
Boil cauliflower in salted water for 5 mins or until soft.
Season the cauliflower with half of The Greedy Fox BBQ seasoning drizzle with 1tbsp olive oil and roast for 30 mins, Brush liberally with bbq sauce and roast for another 10 mins to set the glaze.
Place the mini taco wraps in an large bowl tip over the melted butter and toss to coat each piece season with half of The Greedy Fox BBQ Seasoning.
Using the back of a muffin tin place each taco wrap folded between the muffin holes
bake in the oven for 5 mins so they hold the taco shape when removed and cooled down.
Mix the carrot,cabbage and onion together.
For the tacos
Place the taco standing up in front of you add a little cabbage salad then the BBQ glazed cauliflower drizzle with a little more BBQ sauce.
