1 small white onion, roughly diced
1 Tin Black Pinto or Adnuki beans
1-2 Tsp The Greedy Fox Mexican Seasoning
1 Bay Leaf
1 veg stock cube
Chopped chilli [optional]
1-2 Tsp oil
Saute the onion in the oil over a medium heat until the onion is translucent, add The Greedy Fox Mexican Seasoning and the bay leaf and the chilli if using, continue cooking for a min or two until the spices release their aroma.
Tip in the beans and their juices add the stock cube, simmer over a medium heat for 15mins stirring occasionally until the beans have absorbed all the juices and look thick and stodgy.
Garnish with more chilli. [optional]
