A lovely quick and simple warming soup for all occasions.
300g Cauliflower cut into bitesize florets
1/2 medium onion chopped
1-2 tsp The Greedy Fox Mexican Seasoning
400ml Chicken/Veg Stock
100g peeled cubed potato
4 tortillas to serve
1tsp olive oil
In a heavy bottomed saucepan saute the onion in the oil over a medium heat until translucent around 7 mins, stir in The Greedy Fox Mexican seasoning and add the potato and cauliflower and continue to saute for 5 mins.
After 5 mins add the stock bring to a simmer and simmer until veg is soft, around 10 mins.
Blend until smooth.
Heat a frying pan big enough to fit the tortilla and one at a time dry fry on each side until crispy.
Serve piping hot with a crispy tortilla
