Smokey Steak Bubble and squeak, poached egg and hollandaise sauce.

The perfect way to use up left over potatoes and veg, topped with a poached egg and the luxurious hollandaise sauce. This will transform all your left overs into a meal fit for a king.

Here is what we used but you can use any left overs from sunday lunch or cook some especially, either way its sure to taste delicious

Ingredients.

Roast potatoes

left over veg. We used kale and cavolo nero

1 egg white

The Greedy Fox Smokey steak seasoning

1 tbsp plain flour we used doves gluten free plain flour. But any plain flour will work.

A handful chopped chives

A handful chopped Thyme.

Method.

Place the first 7 ingredients into a food processor and blend until well mixed but leaving with a little bite. If you don’t have food processor place ingredients in a large bowl and mix well.

Form into burger sized patties.

Fry over a medium heat until warmed all the way though.

Top with poached egg and hollandaise sauce.

Garnish with a little chopped chive and fresh thyme.
