Serves 4 easily halved or even doubled.
4 Salmon fillets from sustainable sources
1/2 Red Pepper sliced
1/2 Green Pepper Sliced
1 Medium Red onion (root left intact and cut into 8 wedges)
2-3 Tbsp The Greedy Fox Mediterranean Seasoning
5-6 Sun-dried tomatoes
A handful of cherry tomatoes [optional]
1 large baking potato cut, peeled and cut into bitesize pieces (or halved new potatoes)
A handful of cut savoy cabbage leaves
1/2 Portion The Greedy Fox Mediterranean Ragu
2 Tbsp olive oil
Pre-heat oven 180 degree
Put the cut potatoes into salted boiling water and boil for 6 mins. Drain.
Add the potato to the sliced peppers and toss in the oil.
Season with 1-2 tbsp The Greedy Fox Mediterranean seasoning toss again to coat the veggies in the seasoning.
Transfer to a baking/roasting dish
Cook for 20 mins and remove
Turn oven up to 200 degree
Season salmon with 1 tbsp The Greedy Fox Mediterranean seasoning.
Toss the cabbage through the cooked veggies.
Top the veggies with The Greedy Fox Mediterranean Ragu.
place salmon on top of the veggies and Ragu and return the oven, cook for 15 mins.
Serve straight out of the tray, BE CAREFUL IT WILL BE VERY HOT!!!
