A quick and easy way to use Christmas leftovers, turkey, cranberry sauce, cheese from the cheese board. Don’t be scared to mix this up a bit…the possibilities are endless. This is a staple Monday night tea in our house with all the roast dinner leftovers.
The Greedy Fox Leftover Christmas Quesadilla
8 Soft Tortillas
350 g leftover turkey
Cheeses left over from the cheese board. We like using brie/camembert or just cheddar.
The Greedy Fox Cajun/Mediterranean seasoning
Lie 4 Tortillas out and spread each with some cranberry sauce then top with the leftover turkey and chorizo.
Finely slice or grate the cheese and scatter over the turkey and chorizo.
Season to taste with the greedy fox Cajun/Mediterranean seasoning
Top each with another tortilla and dry fry each tortilla for 2-3 mins or until crisp and golden.
Turn out onto a chopping board and slice into wedges.
