Serves 2, easily doubled or even tripled.
2 Salmon Fillets from sustainable sources
1/2 Red Pepper sliced
1/2 Green Pepper sliced
1/2 Red onion root left intact and cut into 4 wedges
2 tbsp The Greedy Fox Cajun Seasoning
2 tbsp rapeseed oil or a few sprays of your healthy alternative
Pre-Heat Oven 180 degree
Add the potato to the sliced peppers and onions and toss in the oil.
Season with 1 tbsp The Greedy Fox Cajun seasoning toss again to coat the veggies in the seasoning. cook for 20 mins.
Turn oven up to 200 degree
Season salmon with 1 tbsp The Greedy Fox Cajun seasoning.
Place salmon on top of the veggies and return to the oven, cook for 15 mins.
Serve and build your fajitas straight out of the tray, BE CAREFUL IT WILL BE VERY HOT!!!
