Serves 2. Easily doubled or tripled.
2 Bass fillets from sustainable sources, ask your fish monger.
1 Red onion, sliced.
Parsley 1 lemon cut into slices
1-2 Tbsp The Greedy Fox Cajun Seasoning mixed with the same amount of water or oil to make a paste.
1/2 courgette cut into 1 cm rounds.
1 tsp oil
Pre-heat oven 200 degrees
In a shallow bowl mix The Greedy Fox Cajun seasoning with an equal amount of oil/water to make a paste. Dredge the Bass fillets through the paste
Take a large sheet of foil about 30cm square brush the edges with the tsp oil, fold in half sealing 2 of the 3 edges to create a parcel.
Add half the onion, half the Lemon, half the courgette and half the parsley placing the Cajun bass on top sealing the parcel when finished. Repeat for the other fillet of Bass.
Transfer to baking tray and bake for 15- 20 mins.
