250gr Grated Beetroot
100gr washed and grated potato
1tbsp The Greedy Fox Caribbean or Cajun Seasoning
1tbsp gluten free plain flour, any plain flour will work here.
1/2 Small diced white onion
2 Tbsp olive oil or your healthy alternative
Gently fry the onion over a medium heat in 1 tsp of the oil until soft about 5-7 mins.
Meanwhile mix the beets and potato and squeeze out as mush water as possible.
Add the onion, The Greedy Fox Caribbean seasoning and flour.
Taste and adjust the seasoning as required.
Shape into four equal sized balls and flatten to form patties.
Fry in the remainder of the oil 4-5 mins each side or until crispy.
