The Greedy Fox Mexican Bubble and Squeak

Serves 2 but easily doubled.


500g of leftover veg. We had roast potato, roast sweet potato, sprouts, peas and mushy peas leftover from Sunday dinner.

2 Tbsp The Greedy Fox Mexican Seasoning

1 Tbsp flour

1-2 tbsp water if mix seems a little to dry.

A little flour for dusting.

1 Egg

Marks and Spencer Mole Paste.


Pre-Heat Oven 200 degree

In a bowl big enough for the veg add The Greedy Fox Mexican seasoning and mash until its at your desired consistency. If a little dry add the water 1 tsp at a time.

Form into 100 gram burger style patties.

Dust with a little flour.

Line a baking tray with grease proof paper top with the veg patties and bake for 15-20 mins turning half way through.

Top with a Fried Egg and we like to use the Marks and spencer Mole paste diluted into a cheeky little sauce. But this is optional.
