Ingredients
1 Avocado
2 eggs beaten
100 grm gluten free plain flour
4o grm Panko breadcrumbs. If you cant get panko any breadcrumbs will work just as well
2 tbsp The Greedy Fox Smokey Steak seasoning
Method
Pre heat oven 220 deg
Cut the Avocado in half and remove the stone
Run a spoon between the flesh and skin to remove the flesh keeping the Avocado in one piece, and repeat with the over half.
Cut avocado into wedges. you should get around 8.
In 3 large bowls put the flour and The Greedy Fox Smokey Steak seasoning into one bowl and mix well the eggs into another bowl then the breadcrumbs in the final bowl.
Line a baking tray with greaseproof paper
Coat the avocado in the flour then the egg and finally into the breadcrumbs and place on the baking tray.
Repeat with the remaining wedges.
Cook in the oven 12-15 mins.
